Ingredients
  • 2 tbs olive oil
  • 1/2 cup chopped chives
  • 2-3 garlic cloves
  • 1 tbs chopped ginger
  • 2 cups water
  • 1/2 veggie stock cube
  • 1 large butternut squash
  • 1/3 cup coconut milk
  • 3 tsp lime juice
  • 5 fresh cilantro leaves
  • 2 tsp cumin powder
  • 1 tsp coriander seeds
  • chilli flakes (optional)
  • salt
  • pepper
Directions
  • Step 1 Chop up chives, garlic, ginger and squash (peel skin and chop into chunks).
  • Step 2 In a wide pot, add oil, chives, cumin and coriander seeds on medium-high heat and stir for about 3 minutes.
  • Step 3 Add garlic and ginger and stir for 2 minutes.
  • Step 4 Add the rest of the ingredients, reduce heat, cover and let simmer for 20 minutes.
  • Step 5 Put mixture in a blender and MAKE SURE AIR CAN ESCAPE by taking out the center piece. Blend until preferred consistency is attained.
  • Step 6 Garnish with cilantro leaves.
  • Step 7 Enjoy!
