  • 1/2 courgette
  • 3 potatoes
  • 1/2 sweet potato
  • 3 tomatoes
  • 4-5 garlic cloves
  • 5-6 mushrooms
  • Olive oil
  • Rosemary (fresh or dry)
  • Chili flakes (optional)
  • Salt and pepper to taste
  • Step 1 Set oven to 425°F.
  • Step 2 Cut potatoes and veggies into chunks. Peel garlic and leave whole.
  • Step 3 Drizzle some oil in a baking tray (not too much) and add regular and sweet potatoes. Put in oven for about 10 minutes.
  • Step 4 While waiting, put all remaining ingredients in a bowl. Douse everything a bit in the oil- then add the rosemary, flakes, salt and pepper to your liking.
  • Step 5 Add everything to the potatoes and leave to bake for 20 minutes (or until you can press a fork through vegetables).
  • Step 6 Dish out and enjoy!
