Ingredients
  • 2 slices of bread
  • 1/4 avocado
  • 1/2 tin of baked beans
  • 100g mushrooms, chopped
  • 2 vegetarian sausages (optional, we use Linda McCartney or own brand)
  • 1 garlic clove, crushed
  • Handful of spinach
Directions
  • Step 1 If having sausages, heat according to package instructions.
  • Step 2 Add the garlic to a frying pan with a splash of olive oil. Once fragrant, add the mushrooms and stir.
  • Step 3 Meanwhile, add the beans to a saucepan and heat over low heat, stirring frequently and ensuring it doesn’t boil.
  • Step 4 Cut the avocado in half and scoop out the flesh, mash it with a fork and set to one side.
  • Step 5 Add the spinach to the pan of mushrooms and garlic and stir.
  • Step 6 Toast the bread, top with the avocado and the rest of the ingredients once piping hot.
  • Step 7 Drink plenty of water to keep yourself hydrated if you have had a few too many last night!
